Several years back, two of the kitchen staff were a fabulously adorable vegan couple in their early twenties. They even went so far as to make home-made seitan for marinated veggie-seitan kebabs. Dedication, hard work, and delicious food were hallmarks of their presence. These two made such a delicious granola (because most conventional granola isn't vegan) that I begged for the recipe, which I now bring to you.
Delicious Vegan Granola
1/2 cup canola oil
1/2 cup molasses
6 c oats
1 c coconut (unsweetened)
1/2 chopped almond
2/3 cup bran or wheat germ
1/2 cup sunflower seeds
1 Tablespoon cinnamon
1/2 teaspoon salt
1 1/4 cup craisins
Preheat the oven to 350 degrees.
In a pan, heat the molasses and oil and stir until blended.
Remove from heat, stir in all the ingredients except the craisins.
Spread on a baking sheet (or several, as needed). Bake 10 minutes.
Toss with a spatula, then bake 5-10 more minutes until golden brown.
When cool, add craisins.
Delicious with milk, soy milk, or plain yogurt!
